
The Journey Behind JoJo’s Taco with Joellen and Mike Greenlee
I’m joined by Joellen and Mike Greenlee, the dynamic duo behind JoJo’s Taco. We’re at the South Charleston Farmers Market for their grand opening, where they’ve brought their food truck to serve up some delicious tacos and nachos.
Joellen tells me their tacos are made with a special recipe that includes 13 different spices. She explains how they created the recipe by hosting a Super Bowl party, where they had guests vote on six different taco options. Recipe number five, which includes a surprising ingredient—ginger—was the winner. Ginger, she explains, helps with indigestion and heartburn, adding a unique twist to their dish.
Mike shares that their operation is all about farm-to-table freshness. They grow their own vegetables in a greenhouse, including the tomatoes for Joellen’s freshly made pico de gallo. Mike emphasizes the impact of farmers markets, not just on businesses, but on the entire community. He highlights how local agriculture, from the seeds to the craftsmanship, plays a crucial role in bringing fresh, quality products to consumers.
Running a small business isn’t easy, and Joellen and Mike know this all too well. Joellen notes that their business is a 24/7 commitment, especially since she’s personally involved in making all the produce and pico from scratch. Mike adds that the early mornings and long hours are worth it, especially when you’re passionate about your work.
